Cream Cheese Pancakes

Serves 1.



  • 2 oz of cream cheese
  • 2 eggs
  • 1/2 tbsp of sugar of choice
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • dash of cinnamon


Mix all ingredients except the baking powder and the coconut flour, in a blender. Blend on high for about 30 seconds. Add remaining ingredients and blend again for 30-60 seconds. Heat a non stick frying pan on medium low, add a big dollop of the batter and cook until bubbles start to appear. Flip it and cook for an additional minute on the other side. If the remaining batter is getting thick, it’s completely normal and you just have to add a little bit of almond milk to thin it out. And don’t forget to add your toppings of choice!
